Vartsikhe Marani Dzelshavi Kvevri

Dzelshavi is a rare variety from western Georgia. It’s produced in traditional Georgian Kvevri method, in which the wild yeast fermentation and aging are done in large clay vessels which are buried in the ground. It’s very dark in color and medium to full bodied. Ripe fruits, pomegranate, earth, spices and good texture.

Just decant it gently and serve lightly chilled. Guamarjos!

Vartsikhe Marani Ojaleshi Kvevri

Ojaleshi is a rare variety from western Georgia. It was hand harvested and fermented and aged in ancient clay vessels named Kvevri.  It’s dark red almost black in color, medium bodied, dark fruits and bursting acidity. A very flavorful but low in alcohol wine.  Drink now or age next 10 years.

Decant it gently and serve lightly chilled. Guamarjos!

Matyas Frankovka Modra

The wine has an intensive red-ruby color. On the nose complex and intensive aromas are dominated by fruits. On the palate this well-structured fruitiness vigorously continued. The taste is dominated by ripe red berries, completed by light earthy, mushroomy aromas of the spring forest. Juiciness and fruitiness are further enhanced by velvety tannins. This Frankovka ends with a long lingering aftertaste.

Unfiltered. Wild yeast fermented.

Food pairing: it pairs well with traditional Eastern European roasted duck or goose made with red cabbage and dumplings. Also it pairs well with meals made of small wild animals, such as a wild rabbit ragu, or pheasant.

Best served at 60-65°F.

Matyas Somlyo (Pinot Blanc)

Mátyás Somlyó is a blend of barrel-fermented, orange and other long skin-contact pinot blanc from Slovakia. On the nose, it is dominated by ripe or overripe scents of peach and pear. This character is a result of the oxidative winemaking method. By pouring to glass and getting in touch with air, the fruity character strengthens, then, after a while, the oxidative style is getting dominant, showing typical tones of green walnut.

In the mouth, the mineral saltiness and sourness, coming from the soil, is in perfect harmony with the ripe fruit tones, completed by the light tannins, which makes the overall feel of acidity just about perfect.

Wild yeast fermented. Unfined. Unfiltered.

Pairs well with white meat and pork made with cream or sour cream, also with meals with green herbs, such as thyme, sage or rosemary. Mátyás Somlyó is a great company for aged or smoked cheeses, or aged dried ham.

Matyas SaraDora (Pinot Blanc, Riesling, Welschriesling)

The jewel of the Matyas estate is this traditional orange wine. Pinot Blanc, Riesling and Welschriesling are wild yeast fermented and aged separately in oak barrels before being blended together. Lightly orange in color. Intensive aromas of white fruits, dominated by yellow apple and pear, completed by green tea and tones of spices and bread. Medium full-bodied, fresh, and lively. Excellent acidity makes it savory and juicy. Light tannins create an impressive structure and richness. Serve highly chilled, not cold. Mátyás SaraDora pairs well with medium-heavy or even fat grilled fishes, such as mackerel or salmon. It also matches well with white meats or pork.

Matyas Sandwich Pinot Gris

A longer maceration resulted in powerful amber-golden color.  The aroma is rich and expressive even for the first nose, with seductive tones of ripe yellow pear, apple, herbs, dried fig and teas.

The taste is dry, medium full, and moderately expressive. A bit of tannins in the mouth, the freshness and juiciness is granted by fantastic acids. Mátyás Sandwich Pinot Gris is a perfect easy-to-drink wine with only 12% of alcohol. Completed with a really long finish. In a nutshell: this is a vibrant, non-traditional pinot gris full of life.

Wild yeast fermented. Unfined. Unfiltered. Low sulfites.

Food pairing: it goes really well with fat fishes, like mackerel, salmon, tuna and some freshwater fishes, even with their fried version, such as eastern European traditional Christmas fried carp . Also it matches very well with Italian classics, pastas with tomato and basil.

Best served chilled at 48-50°F.

100% Pinot Noir from organic farmed and hand harvested grapes. Wild yeast fermented in neutral oak barrels. A bit later harvest this year brought big fruit flavors and bigger style of more fuller, fruity wine. Decant and serve lightly chilled. Enjoy with grilled meats, steak and mushroom dishes.

Pivnica Cajkov Pinot Gris Volcanic

Pinot Gris Volcanic is a Single Vineyard wine. All grapes are from a single vintage, yet two different fermentation styles are used. The majority of grapes (70%) were fermented on skins for 6 days, while the smaller part (30%) was fermented for one month.

Thereafter the wine was aged for one year in oak barrels, with a gentle access of oxygen, under a soft flor. As a result we have a massive, fabulously creamy Pinot Gris with a long aftertaste bursting with mineral and salty notes.

The organic farming in the vineyard, and total dedication and adherence to natural winemaking in the cellar, bring about unfiltered and completely natural wines.</p

Pivnica Cajkov Empress Frankovka

Frankovka (or Blaufränkisch) is the most typical red wine variety native to the old Habsburg monarchy. The grapes are coming from Sitno Volcano at the northern border of winegrowing in Central Europe.

Wine is macerated for 28 days on the skins in open vats, and then matured in old oak barrels for three years.

Cajkov Empress Frankovka is bursting with fresh mineral acidity, with superbly integrated alcohol. This wine is a sophisticated reminiscent of Pinot Noir style. It also has a great ageing potential.

Frankovka is a superb match for variety of lamb dishes and grilled meats.

From organically-farmed Malvasia grapes, this aromatic wine opens with bright tones of spring flowers, orange peel, tangerine, honey and marzipan. This is a aromatic and fruity white wine that would work beautifully as an aperitif choice.

Pivnica Cajkov Pesecká Leánka Rustical

A local variety Pesecká Leánka is the Cajkov winery princess, and an essential part of the family tradition. Pesecká was the favourite wine of the owners’ grandparents.

It is simply a delicate and elegant wine, with plenty of fresh acidity, making it perfectly suitable for every moment of the day.

The wine was aged for one year in oak barrels. On the nose it radiates seductive crisp scents of freshly baked apricot cake. The backbone of the wine is a long lemon-style acidity, coupled with typical sweets tannins on the finish.

Pesecká Leánka Rustical is a superb natural wine for warmer days ahead of us.

Tsolikouri is a rare and ancient variety from western Georgia where it’s well known. It produces an exciting floral, crisp and textured wine which is delicious now but will improve with age.  This wine is produced in Georgian kvevri method. The fermentation and aging is done in Kvevri, a clay vessel wchich is burried in the ground. Decant it and serve lightly chilled. Guamarjos!

Krakhuna is a rare variety from western Georgia, which literally translates to “Crispy” in local Imeretian dialect. It’s fermented and aged with wild yeast in kvevri, ancient clay vessels. Bottled unfiltered, it produces an exciting crisp and textured wine which is delicious now but will improve with age. Earthy with dried fruit notes, spices, apricot and peach.

Just decant it gently and serve lightly chilled. Guamarjos!

Chinon Les Graves is a bright, fruity wine, redolent of cedar and fresh red fruit. Its source is 30 year old Cabernet Franc vines from a single vineyard, spontenous fermentation in cement vats, which maintains its terrific fruitiness. The Gasnier’s ‘little wine’ is bright and racy and is wonderful with grilled food, roasted poultry and hard cheeses.

Organic certified grower Champagne from a top producer. Both gourmand and elegant, this cuvée is loved for its ruby color, spicy aromas, and the notes of red berries in its finish. It’s very brilliant color comes from a careful harvest, where only the best grape clusters were selected at optimal ripeness, and from the saignée winemaking method.

This rosé is a great highlight to complement the end of a meal with friends, and pairs well with a dessert made with red berries or a crumble.

Stina Cuvee White

Made on the island of Brac from indigenous grape Pošip, this is a very elegant representative -and very interesting to compare with wines from Island of Korcula and from mainland.

The wine is very mineral and citrus with Brazilian lime and mineral character, full-bodied, and even agile and brisk. It is strong with a powerful, fresh acidity, also abundant in sea salt and fruit to finish. Drink now. 91 points, wrote Suckling.

Piquentum Malvasia Blanc

From vineyards planted in predominately flysch rich white soil unique to Istria. It was fermented in 100% stainless steel after 2-3 days on the skins resulting in a wonderfull texture and straw yellow color. In further contrast to the coast, this is the rugged truffle ridden and forested interoir that results in an undeniable savory character that is kept in balance by lively acidity. Earthy enough to pair with hard cheeses, bright enough to highlight fresh green herbs, and a medium body that stands up to fish, it’s an ideal food wine for the nearby and perhaps more familiar Italian kitchen.
