A combination of 3 varieties from our vineyards Silván + Veltlín 3 weeks of maceration and fermentation on the skins, + Vlach Riesling, 3 months macerated and spontaneously fermented with the skins. The wine was pressed and put into oak barrels, where it matured for 1 year without added sulphur, irregularly mixed with fine lees using the Sur lie method. The malolactic fermentation took place spontaneously during aging in the barrel. Without filtration and clarification. Only 2200 bottles produced. A lively and fun amber orange wine.

For Michal Bažalík, winemaking is a combination of craft, culture, tradition and love for the land, which he probably inherited from his ancestors. He took over the old barren vineyards above Svätý Jura a few years ago from the cooperative, and works them together with his family and friends. The vines are farmed using organic methods, and no chemicals are used in vineyards or cellar. “I think that life doesn’t need a lot. I want to live from what this earth gives me. I’m fascinated by creating, creating something from nothing, completely from the ground up. To live in a place where everything is born, to be a part of the whole process. To grow grapes with humility, without chemicals and with care for yourself and the environment. To make good wine from it with joy and to enjoy it with your loved ones. I think that’s how wine should be.

Estate vines of 35-60 years old in Moussy in Pierry, south of Epernay. It has been fermented in old oak barrels and aged for 10 months in them before being bottled and aged on the lees for 7 years. The wine has a pale color, with a spring of tiny bubbles and a nose of sweet spice cake and fragrant white flowers. This is elegant, complex Champagne with a very long, gentle finish. It should keep for more than a decade, but will certainly make any occasion between now and then special!

Budeshuri Saperavi Kvevri

Budeshuri Saperavi Kvevri

Wild yeast fermented and aged in ancient clay vessels called kvevri. This wine is dark, exotic and unusual with notes of dark fruits, earth and spices.

Gabriel is an Orthodox Christian monk who lived in the 6th century monastery Shio-Mgvime for twenty-seven years. There, he tended crops and learned to make wine and cheese while becoming a blacksmith. He then returned to his childhood home and began making traditional, natural wine with the help of friends. This wine is completely handmade, using an ancient method in which fermentation and aging is done in buried clay vessels called Qvevri. Unfiltered.

A Qvevri (pitcher) is a large clay amphora-like vessel, that is traditionally buried in the ground up to its neck, and in which wine is fermented and stored. After the fermentation process, which occurs naturally without any additives, the kvevri is sealed with a ceramic lid and then buried in soil. The wine is left to mature for up to six months before the Qvevri is opened and the unfiltered but clear wine is ready to be bottled. Georgia’s traditional kvevri winemaking method is listed in the UNESCO intangible cultural heritage list.

Built in 1551 by the Rozereau family, it was acquired in 1999 by its present owners, Hélène and Arnaud Derats, who restored the chateau and also acquired the family winery, which includes 22 hectares of vineyards located in Côtes de Beaune and Côtes de Nuit regions.

In 2000, Arnaud Derats educated as an Engineer and following a 10-year career in the construction industry, was captured by tradition: with his wife Hélène, they bought the Château de Melin, located on the town of Auxey Duresses, and decided to settle the family estate vineyards. The Château de Melin currently operates 25 hectares of vineyards and produces 22 appellations: 20 in the Côtes-de-Beaune and 2 in the Côtes-de-Nuits areas. The vinification process , the aging and bottling of the wines is accomplished in our cellars at the Château.

The vineyards have been organic farmed since 2009. No pesticides, herbicides, nor chemicals. Alternatively, organic farming entails soil cultivation thru plowing, grass cutting and exclusive use of natural sulfur and copper as treatment against diseases on the vines. Chateau Gaudrelle ‘Tintamarre’ pet-nat

Chateau Gaudrelle farms 20 hectares (50 acres) of vineyards in the heart of the Loire Valley. They hand harvest Chenin Blanc vineyards and produce Vouvrey and other wines. As an organic-certified estate, they encourage the biodiversity and we give life back to the ground by working the soils. In order to not tamp them down, they also use the animal traction with a horse in the plot “Clos le Vigneau”. In the cellar, they are dedicated to a low intervention approach.  They harvest and make  wines with biocontrol which means they employ natural mechanism to fight against harmful organisms. Thereby, the sulfur is reduced at the minimum amount. Everything is done to produce expressive white wines to give you more pleasure. Nature and the people are at the heart of our thoughts and we emphasize our evolution by starting to use the biodynamic on one of our plots.

This is a 100% Chenin Blanc pet-nat. Fermented in the bottle and unfiltered. Serve very chilled.

The Laurent family has been sharing their passion for wine for decades, through the cuvées of Château l’Escart, produced from their one piece of 37ha of vineyards in Saint-Loubès. Gérard and his team know that greatness in wine depends essentially on the greatness of the grapes. This is why they take really good care of the vineyards, in order for the vines to naturally resist parasites with as little treatment as possible. They know how important it is to respect the land that doesn’t belong to them. Thus, each harvest keeps the full expression and richness of the terroir. As they say at Chateau l’Escart: “Making great quality wines and respecting the land that we are borrowing from our children”. It is precisely for this reason, and their strong relationship to their terroir, that they decided to convert the vineyards to biodynamic farming. This philosophy continues in the cellar, where only indigenous yeasts is used in the fermentation.

Made from 60% Merlot, 30% Cabernet Sauvignon and 10% Malbec from hand harvested 35 to 45-year old vines.

60% Cabernet Sauvignon and 40% Merlot

Dark intense fruit; cooked cherry, licorice, currant, and hints of baking chocolate. Intense and concentrated on palate. Ripe cherry, licorice, blackberry followed dry tannins and a tightly wound fruit on the finish.

Do Re Mi wines are all made in Qvevri which are handmade, large buried clay vessels used to ferment and age the wine. Qvevri range in size from 250 liters to 2500 liters. The lightly pressed juice is fermented with the skins, with wild yeast and free from any additives. After fermentation is finished, the Qvevri are sealed and covered with soil until Spring time. During the process, the solids in the wine slowly drop to the bottom of the qvevri and the clear wine rises to the top. When temperatures drop in December and January, te fermentation is complete and the wine is transferred to new qvevri and left to age for more months. In the spring time the wine is drunk during big celebrations called Supras and leftover is bottled. Do Re Mi is very proud to continue the long tradition of Georgian wine making and they’re pleased to offer you pure and authentic natural wines.

Biancopiglio is the free spirit that wanders our Mount Etna volcano, inspires Emilio and Emanuele in the making of this wine with a very large personality. This beauty is produced from organic farmed and hand harvested Carricante, Cataratto and Grecanico grapes.  This wine is made with full respect for nature, our traditions and our territory. Five days of skin contact adds depth and orangish color to this rare Etna amber wine.  Five days of skin contact maceration, results in a medium bodied, distinct and exciting wine that packs a mineral punch from the volcanic soils. Unfiltered, Unfined, low added sulfites.  Only 2000 bottles produced.  Enjoy lightly chilled.
