A delicious and well made Pinot Gris from a small producer. Skin contact of 48 hours gives the wine a beautiful bronze color with a slight pinkish hue. Dry farmed from a single vineyard and produced with organic and biodynamic methods. Notes of white cherries, melon, and quince are present. With a lush mouthfeel this wine is perfect with fish, chicken and light fare but has the body for steak tacos, chipotle sauces, and spicier Indian food. A delicious and versatile wine.

Manuel Olivier Hautes Cotes Nuits Pinot NoirDomaine Manuel Olivier’s Bourgogne Hautes Côtes de Nuits Rouge is a wine from Pinot Noir planted just above the Grands Crus of the Côte de Nuits. Located on an East-Southeast-facing slope 350 meters above the Clos de Vougeot on rocky clay and limestone soils, it is destemmed, cold macerated for a week, wild yeast fermented half in tank and half in old barrels then aged on its lees for 9 months. Then it is bottled unfined, unfiltered and with a minimal drop of SO2. This wine is a bright yet dense Pinot Noir that offers red berry and flowery notes, ending with a long finish.

Krasna Hora Pinot NoirAn elegant and beautiful Pinot Noir. Ruby-colored with a bright purple hue. The lovely nose is brimming with red berries, cranberries, and subtle touches of violets and roses. The bouquet shows intense cherry and raspberry fruits along with hints of violets and thyme.
On the palate one immediately picks an intense fruitiness with balanced and silky tannins and a refreshing, mouth-watering finish. The wine has a very long lingering aftertaste.
Krasna Hora Pinot Noir has that delicate lightness, yet still a firm grip and powerful presence on the palate. This lovely natural wine is made without fining or filtration.
Pinot Noir is a very versatile food pairing wine given its higher high acidity and lower tannin. This rendition of Pinot Noir pairs exceptionally well with duck, chicken, pork, and mushrooms.

Harvest was done by hand, while total yield was only 1kg per vine. Vinification included 1 month skin-contact fermentation, after pressing ageing on the lees for 4 months. This wine is both unfiltered and unfined.

Gérard and his team know that greatness in wine depends essentially on the greatness of the grapes. This is why they take really good care of the vineyards, in order for the vines to naturally resist parasites with as little treatment as possible. They know how important it is to respect the land that doesn’t belong to them. Thus, each harvest keeps the full expression and richness of the terroir. As they say at Chateau l’Escart: “Making great quality wines and respecting the land that we are borrowing from our children”. It is precisely for this reason, and their strong relationship to their terroir, that they decided to convert the vineyards to biodynamic farming. This philosophy continues in the cellar, where only indigenous yeasts is used in the fermentation.
Made from 60% Merlot, 30% Cabernet Sauvignon and 10% Malbec from hand harvested 35 to 45-year old vines.

Manuel Olivier Cremant De Bourgogne BrutVery nice cremant made from 25% Aligoté, 50% Chardonnay, 25% Pinot Noir. The three grape varieties are assembled after malolactic fermentation. Aligoté is an ancient grape variety in Burgundy. Like the more famous Chardonnay, it also comes from a natural cross between Pinot and Gouais Blanc. Aligoté brings freshness to sparkling wine. Chardonnay traditionally stands for finesse – reinforced by Manuel Olivier by using a Chardonnay that has matured for 1 year. Finally, Pinot Noir gives the wine its structure. The cremant is naturally made in traditional bottle fermentation.

Matic Wines Mea Pet-Nat (Šipon / Furmint)Petillant Naturel, or “Pet Nat,” is a natural sparkling wine, wild yeast fermented and aged in the bottle. This winemaking method is ancient, and the first method used to produce sparkling wines. It’s also called Method Ancestral, the method of our ancestors. Delicious mineral and fruit notes of the old vine Šipon are integrated with yeast notes from bottle fermentation. Flavors of citrus fruits and notes of bread, cookies, spice, and sometimes beer or cider flavors are noticeable. Cloudy, pale white in color, Matic describes this wine as “one funky piece of winemaking!” It’s a consistent crowd favorite and our essential sparkling wine.

Matic Wines KernerKerner is a deliciously fruity, medium bodied white wine. Often found in vineyards throughout Germany, Austria, Northern Italy, and Switzerland, it is a cross between Riesling and Schiava. Matic’s Kerner is lively and fun, showing floral notes as well as the acidic and mineral backbone. Coming from a 27-year-old vineyard, the fruit is mature enough to produce excellent fruit. All organically / biodynamically farmed, the wine is rested on the skins for 36 hours after it is gently pressed. It then ages for six months on the fine lees. This adds texture and complexity to the wine. Perfect for summer, this wine is outstanding on its own or paired with fish, salads, and grilled meats.
